Filling ideas (FULLY COOK BEFORE PUTTING IN THE PIES)
- Ham and cheese
- Egg, mushroom, onion, cheese
- Beef and cheese
- Chicken and peas and corn and mashed potatoes
Crust Recipe
For a Single Pie Crust:
- 1/3 cup + 1 Tbsp COLD Butter {90 grams}
- 1 cup GF Flour
- 1/4 tsp Salt
- 1 Egg, well beaten
- 2-3 Tbsp Cold Water
- Olive oil for the pan and for your hands
Heat the oven to 375°F
Beat the butter first (butter starts cold but will warm slightly during the process. If the butter is too warm the dough gets too sticky and must be refrigerated)
Put the rest of the wet ingredients in.
Beat it into a dough.
With oil on your hands, shape the dough into flat circles, about 3/8ths of an inch thick or so. Put each circle on the oiled pan.
Put your fillings in, and fold the circles over, and use a fork to press down the edges gently but firmly enough to hold em together.
Put oil on your hands and gently coat your hand pies with oil.
Cook in oven about 30 minutes, until golden brown.
